Pick, wash and dry a large bowl of spring mix lettuce. Add raw kohlrabi if desired.
In a skillet, fry about eight slices of bacon until crisp and brown.
Crumble bacon over the lettuce.
Pour the fat out of the skillet, leaving 3 Tablespoons in the pan.
Add the water, green onions, sugar, and vinegar to the skillet. Bring the mixture to a boil, all the while scraping the brown bits from the bottom of the skillet.
Pour the boiling mixture over the bacon, lettuce and kohlrabi.
Stir and serve immediately.
