Vegetable Beef Soup with Squiggle Noodles

This is a Delperdang family recipe. The squiggle noodles are like small dumplings.
 Quantity Unit Ingredient 
7 quarts water
2.5 pounds beef soup bone
1 pound beef stew meat
1 onionchopped 
2 pounds carrotssliced 
1 bunch celerysliced 
6 potatoeslarge diced
3 tablespoons dried parsley
2 28 ounce ca diced tomato
2 teaspoons salt
0.5 teaspoon pepper
4 
eggs
3 cups flour
pinch salt


Place the water, soup bone and stew meat in a large soup kettle. Bring to a boil. Reduce heat; cover and simmer for 2 hours.

Remove soup bone and meat; allow to cool. Remove beef from bone and cut into bite sized pieces; return to kettle.

Add vegetables to the broth and simmer for 45 minutes - 1 hour, till fork tender.

In a bowl, add enough flour to the beaten egg to form a stiff dough. Stir in a pinch of salt.

Bring soup to a gentle boil. Using a fork and a squiggle motion, drop small amounts of the dough into the broth. Cook squiggle noodles about 5 - 10 minutes, till tender.

Adjust seasoning before serving.
