Refrigerator Pickles

The original of this recipe appeared in the Heiden Family Recipes book.
 Quantity Unit Ingredient 
1 cup vinegar
2 cups sugar
1 teaspoon celery seed
7 cups cucumberssliced 
1 green pepperdiced 
1 onionsliced 
1 jar pimientodiced small 
1 Tablespoon salt

Heat vinegar, sugar, and celery seed just enough to dissolve the sugar. Set aside to cool.

In a colander, place the cucumbers, green pepper, onion, and pimiento. Sprinkle with the salt and let stand one hour.

Rinse cucumber mixture with cold water and drain.

Place cucumber mixture in a large bowl.

Pour the vinegar syrup over the cucumber mixture and stir.

Put into containers and refrigerate or freeze.
