Sugar Top Muffins

The original of this recipe came from Better Homes and Gardens Country Baking.
NOTES : Batter may be made up to 1 week in advance. Store batter in a tightly covered container in the refrigerator. Stir before using.

 Quantity Unit Ingredient 
1 cup flour
1 cup oats, rolled (raw)
0.75 cup packed brown sugar
0.75 teaspoon baking powder
0.75 teaspoon baking soda
1 
egg
0.75 cup milk
0.33 cup cookiing oil
1 teaspoon cinnamon
0.25 teaspoon nutmeg

In a medium mixing bowl stir together flour, rolle oats, brown sugar, baking powder and baking soda. Make a well in the center. Set aside.

In a small mixing bowl combine egg, milk and cooking oil. Add all at once to the flour mixture. Stir just till moistened (batter should be lumpy).

Line muffin pan with paper bake cups. Fill 2/3 full with batter. Sprinkle with raw sugar.

Bake in a 375 degree oven for 18 - 20 minutes or till golden.

Remove from pans. Serve warm.
